After working on this project, I noticed several things pertaining to my food experience. The first being that this dichotomy of food choices came very naturally to me. I thought that perhaps my digestive system would be upset with the sudden change from food filled with oil, grease, and countless additives to food that had as little additives as possible. But I was mistaken. This transition was very natural, and after reflection, I realized this was how I lived most of my life. I have times where I eat very unhealthy, craving processed food with additives, and then the next day I want nothing but raw vegetables and fruit.
Midway through my less processed food day, I started craving Dr. Pepper. This craving reminded me of something Michael Moss said in The Extraordinary Science of Addictive Junk Food. He talked about bliss point and how soda and highly additive food substances were designed to draw you in and have more.
Also I noticed that I ate much more when I was eating less processed food. I found that the things I was eating were less filing. If I were to fathom a guess as to why this was the case I would guess it was because the less processed food did not have as much calories as I was used to in my normal diet due to the additives, like highly processed corn starch, as Melanie Warner discussed in Pandora’s Lunchbox: How Processed Food Took over the American Meal.
Overall I found this very challenging. It is hard enough to find vegetarian meals I want to eat on campus. Then, adding the stipulations that I didn't have to have processed food made my meals almost impossible.
